By: Deborah Waddell
Cook Time: 20-30 minutes
Yield: 4-6 servings

Ingredients:

  • 1 (16 oz) bag of split peas
  • 1/2 medium onion chopped
  • 2 stalks of celery
  • 2 potatoes, peeled and chopped
  • 2 large carrots sliced
  • 2 bay leaves
  • 8 cups of water
  • 1.5 Tbsp of herb mare or to taste
  • 6 cloves of garlic
  • 1 tsp dried basil
  • 2 Tbsp parsley
  • 0.5 Tbsp cumin
  • 1 tsp smoked paprika

Directions :

  1. Place all the ingredients into a large pot and bring to a boil.  Skim off any foam that forms while boiling.
  2. Cover and simmer for 20 – 30 minutes or until peas and vegetables are tender.
  3. Place 3 – 5 cups of the soup into a blender and puree until creamy.
  4. Replace the pureed soup into the pot and add seasonings if necessary.

Instant Pot: Place all ingredients into the IP and cook on Manual for 9 minutes with Natural Release (NR).  When done, remove the lid and press Cancel. Let the soup cool and thicken up a bit before eating.

Notes: This is a quick and easy soup for those nights when you are in a rush for a quick and nourishing meal. I use about 5 cups of the soup to puree because I love my soup thick and creamy.
